I don’t know about you, but during the pandemic my wife and I have been doing so much cooking at home that we have overused some of our favorite recipes. Even with restaurants open we have tried to limit our trips to just take-out. I can’t tell you enough how great the Hy-Vee Seasons magazine has been for creating new and simple recipes. I went back to the June magazine and immediately found a meal that caught my eye. Taco Pockets. Yeah… I think that’s going to get most people’s attention. It’s a very easy and quick recipe but it’s awesome. Basically it’s your traditional taco fillings stuffed in a crescent roll. We loved it and even made some extra taco pockets and froze them to use in a week or two.
I also have been trying to pair the appropriate beers to some of the these new creations because well, I like beer. If you know me, you know I try to stay local on that front. This was an easy choice. I went to the Hy-Vee Wine & Spirits department and found Tacoveza from Nebraska Brewing Company. It’s a light lager inspired by the lagers of Mexico.
