Are you getting those invites to outdoor grilling parties? You know, the ones where the hosts will fire up the meat but ask you to bring a side? I’ve got a great one for you and hey, it’s even healthy but we won’t tell anyone. The June issue of Hy-Vee’s Seasons magazine has a fantastic recipe for those summer get-togethers. It’s called the Tomato-Cucumber Toss. It takes around 20 minutes to prepare and it’s a very easy recipe to follow. My wife and I made it and served it when we had friends over a few days ago. They all loved it and wanted the recipe. Well, here you go. See the beautiful photo my wife took of this creation as well. Enjoy!

3/4 cup Hy-Vee plain Greek yogurt

1/2 cup lightly packed cilantro plus cilantro, chopped; for garnish

1/2 Small jalapeno pepper, seeded and chopped

1 clove garlic, minced

2 Tbsp. fresh lime juice

1/4 tsp. Hy-Vee salt

3 cups Hy-Vee sweet grape tomatoes, halved

1 English cucumber, sliced 3/4 in. thick and quartered

1 avocado, seeded, peeled and chopped 1/2 cup sliced red onion

Hy-Vee coarse-ground black pepper, for garnish

Step 1. For Dressing, place yogurt, 1/2 cup cilantro, jalapeno, garlic, lime juice and salt in a blender. Cover and blend until smooth. Set dressing aside.

Step 2. Combine tomatoes, cucumber, avocado and onion in a large bowl. Add dressing. Gently toss until coated. Cover and chill for 30 minutes before serving. Garnish with chopped cilantro and black pepper, if desired.
